A gel has been phenomenologically defined as a soft, hard, or solid material consisting of two or more components, one of which is a liquid, present in substantial amounts.

Sodium alginate gel formation is discussed below;

Step 1: Mix dry sodium alginate powder with distilled water
For a great gel, use 100 ml of distilled water and 1 teaspoon of sodium alginate (this is a 2% solution of sodium alginate).

Step 2: In another container, mix calcium chloride with distilled water
Use a heaping teaspoon of calcium chloride in 100 ml of distilled water (this is a 5% calcium chloride solution)

Step 3: Create a gel by adding dissolved alginate to the calcium solution
Using a spoon or dropper, add (i.e., drip or spray) some of the sodium alginate solution to the calcium chloride solution. The calcium instantly reacts with the sugar units in the alginate and pulls the long flexible chains of the alginate into a gel.
